I can’t believe it’s Wednesday already! This week is going so quickly.
I usually write a blog post on my lunch break, but today my work provided us all with Jet’s pizza and I ate with my co-workers. Jet’s is close to the best pizza, if not the best. The turbo crust (it’s garlic-y and butter-y) and sauce are perfect to me. The sauce tastes fresh and not too sweet or too much like ketchup. It tastes like actual seasoned, crushed tomatoes. So good.
I ate a slice topped with banana peppers and another topped with pepperonis. Couldn’t have been a better surprise lunch. It was also good because I felt super rushed this morning and didn’t pack a lunch to take with me. I was thinking about going to Subway before I found out there was pizza. Free food!
There is nothing more frustrating to me than feeling rushed in the morning. I hate it, but when I have to be at work at 7, every morning feels semi-rushed. That’s why I like to prepare food and set my clothes out the night before. I went to sleep super early last night, though, and didn’t do anything to prepare for the morning. I regretted it all day because I didn’t get a real breakfast and I had no lunch. Glad one of those losses took care of itself!
When I got home from work, I had about 30 minutes before I had to head out again to tutor down the street. I threw together a Mexican concoction for John to take to work with him tonight and for me to eat when I got home from tutoring.

- 13 ounce can of chicken
- 15 ounce can mild chili beans
- 15 ounce can white hominy
- 15 ounce can crushed tomatoes with garlic
- chili powder
- garlic powder
- salt & pepper
So easy! I wanted to throw in some fresh red and green bell pepper and onion but I didn’t have enough time. I also heated up a frozen bag of green beans. I’m having all that with a side of avocado and corn chips.
