I wanted to write my weekly Weekend Highlights post yesterday, but I didn’t really have the time. I’m still planning to write it, though, because it was a good weekend with family and friends.
But for now, I just wanted to stop by real quick to talk about last night’s dinner. I made the most delicious perfect asparagus. Yes, I am writing practically a whole post dedicated to asparagus. Not just any asparagus, though. THIS asparagus.
All you need is:
- fresh asparagus
- garlic powder
- salt & pepper
- parmesan cheese
First, cut the hard bottoms off of the asparagus. Turn a pan on medium high, place the asparagus in the pan, drizzle with olive oil, and sprinkle salt and pepper and garlic powder on top. Cover with a lid and let the asparagus tenderize in the pan, turning the asparagus every once in a while. I like when the asparagus is soft, but also looks slightly roasted. Then I sprinkle a little parmesan cheese on top. Let the cheese melt into the asparagus in the pan, then take off the heat and serve.
It’s probably the best asparagus I’ve had in a long time.
John wasn’t feeling the best last night, so we ate soup per his request. I ate my asparagus with this soup, which I added an extra can of chicken to.
It was a good combo.
