New Year’s Eve + A Sweet New Years Day Breakfast

Happy New Year!

John and I had a low-key night after he worked all day at the hospital. We dressed up and used a coupon to eat at our favorite restaurant Cinco De Mayo before coming home, hanging out on the couch, and watching the ball drop on TV in New York and the music note drop in downtown Nashville. We never got to spend New Years together when we were dating, so I was just happy to be with him no matter what we did.

I can’t believe 2015 is over. It was a big year for both John and me. We got engaged in January, John graduated in May, we got married in June, moved out of the houses we had lived in our whole lives, got new jobs, and John recently got accepted into Physician Assistant school! He worked so hard all through college to make in into PA school, and I’m so proud of him. It’s going to be crazy watching him actually begin PA school this spring after all that time and hard work. I’m excited about 2016.

This morning, I started the new year off on a sweet but healthy note. I made oatmeal with sweetened almond milk, chocolate coconut peanut butter, pecans, raisins, and chocolate chips on top.

I found this chocolate coconut peanut butter on clearance at Marshall’s last week, and I’ve been eating it for breakfast a lot–either on toast or in oatmeal. It’s so good and not too sweet!

I also had a grapefruit, which is one of my all time favorite fruits. I could drink grapefruit juice by the gallon.

All that with a cup of green tea.

Kick off the new year with good breakfasts. It really will change your whole day.
