Mediterranean Eggs + Arugula

This is a short post just to share my new favorite breakfast combo that I just discovered today…

So last week I posted about using fresh spinach along with eggs for breakfast. Well, I found something even better this week.

Arugula.

So, so good…

Last week, while John and I were on vacation in Asheville, NC, we got caught in the rain downtown and decided to head into Farm Burger (which is also so good, and I’ll probably write more about that later) where you basically build your own burger. Instead of ordering lettuce as a topper, I opted for arugula. This sparked a conversation between John and me about how we both really like arugula and didn’t even really know about this mutual like. So you better believe that the day after getting home, I went to the store and bought a container of arugula.

This morning, I used a good handful of the arugula under two fried eggs, topped with some delicious mediterranean seasoning, and served it alongside two slices of Dave’s Killer Bread toast, which I briefly wrote about last week.

The fried eggs aren’t the prettiest because they stuck to the pan and fell apart into about 5 pieces. Oops.

Also, if you use this seasoning, a little goes a long way because it is primarily salt.

This is a quick, easy, and healthy breakfast if you’re looking for something a little different with a lot of flavor!
